Question About Trimming Pork Belly

Some folk in my family want me to trim and throw out the meat and fat (and little bid of gland) behind the nipples on the belly. I think that's wasteful and unnecessary. It's a small part of the side but I've never noticed an off flavor between that portion of the bacon and the rest of it. Any comment?

Hmm, never gave it a moment of thought. After stripping the skin (either warm or cold), I've never noticed anything behind the nipples. Once the skin's off I forget all about them.

I'd assume that belly comes from both young females and males, neither of which have yet to develop much in the way of breast tissue, especially the males

Sheeeeesh. I cure the whole darned thing, skin, nipples and all. Once smoked and cooked for b'fast, no one will ever know they're eating nipple.
