Pink Curing Salt

Hi Jamie,

Great new book. I am really enjoying it.

I am having trouble finding pink curing salt for the canadian bacon recipe. I have looked locally as well as online. I have found regular pickling salt, as well as Instacure 1 and 2. Any recommendations on where to find this?

You can use Instacure 1 for that Canadian bacon recipe. It takes a couple days to brine the pork, but holy smokes, the results are well worth the time. It's the best Canadian bacon I've ever tasted.
