Well i did it. Cooked mt 1st butt on my 18 wsm cooker today.I fought with temps for a while,250 was my target but it was 220-270. I pulled it at about 200 degrees & 7 hours later ,let it sit for 30 minutes and it was perfect! Bone slid right out, then i pulled it.I had 7 people over for the UFC fights tonight and everyone was going nuts over it.Did i mention i love my WSM? Thanks to everyone for the help!

Good stuff, just dont tell everyone how easy it is to make good q!

Mark, you may wish, if you haven't done so already, to visit this section of the forum regarding temp control troubleshooting: http://www.virtualweberbullet.com/tempcontrol.html

Also, while I'm in no way a pitchman for BBQ Guru, I used my DigiQ DX (Automatic Temperature Control device) last week for the first time with resounding success - check out this link:

A greater number of forum members, it seems, are Stoker owners/advocates; either device, IMHO, allow you to basically "set it and forget it".

Sure beats walking out to the smoker every hour or so to ensure the temps aren't too high/low!
