Does the 3:1 proportion for fresh-to-dried herbs apply to citrus rinds? Would it be the same proportion for the microplane-grated citrus zests?

Are all citrus varieties the same? More rehydrating time or a higher proportion for grapefruit, for example?

Microplaning and drying citrus zests is one of the best tips (among more than I can count) out there! Thanks, Kevin!

Yes, but differences in ripeness can make a difference if the quantities used are substantial. Not really, but you have to gauge it by dryness.
 
Got it. I have to say that it's really handy to have lemon, lime, grapefruit, and orange dust in my fridge. Nothibg gets thrown out unless it's zested first.

Now, if someone would invent a zester that works a little like one of those automatic (almost) apple and potato peelers, I'd buy one.
