Zucchini Bread

Here is an all time favorite recipe at my house for making zucchini bread.

3 eggs
1-cup vegetable oil
2-cup’s sugar
2-Tsp. Vanilla extract
2-cup’s grated zucchini
½-cup chopped walnuts
1-tsp. Salt
¼-tsp. Baking powder
3-cup’s flour
3-tsp. Ground cinnamon
1-tsp. Baking soda



1.) Pre- heat oven to 325, grease & flour “2” 8X4 inch loaf pans.
2.) In large bowl, beat eggs until light & frothy – add oil& sugar, & mix well.
3.) Stir in zucchini & vanilla. Add flour, cinnamon, baking soda, baking powder, salt, nuts & mix well.
4.) Pour into loaf pans.
5.) Bake @ 325 for 60 to 70 min.


MAKES 2 LOAFS
 
A standard joke around the neighborhood where I grew up was that everyone locked their cars and their houses in the summertime but not in the wintertime. The reason they locked up in the summer was that, if they didn't, they'd come back and find their car or kitchen table full of excess zucchini that neighbors were trying to give away to anybody that would take it.

That is funny.
I currently have enough in my freezer to make about 60 loafs.
Plus were frying it about every other evening as a side with dinner.
But hey,,, we really like it, and the kids like it too.
