Raichlen's Rub...plus changes

Basic BBQ RUB

1/4 c brown sugar
1/4 c sweet paprika
3 T black pepper
4 T coarse salt
2 t garlic powder
2 t onion powder
2 t celery seeds
1 t cayenne

My optional:
1/2 t oregano
1/2 t thyme


I prefer dark brown sugar(dry in 150 oven for 30-45 minutes). You can cut the salt in half or like K. Kruger leave it out entirely (salt meat then apply rub-a good way to limit salt).

This is the rub that I used (yes -I'm new to rubs and the WSM) and it was too hot for the fam. I will mix up a new batch, cut out the cayenne, cut down on the black pepper and the salt. But that's why this is so fun - everyone gets to tinker with everything to suit their own tastes, pocketbook and life.
