Harmony Hut Smoked Peanuts

1 cup unsalted roasted (not dry-roasted) peanuts
1 tablespoon maple syrup (no fake stuff)
1 teaspoon red pepper flakes
1/8 teaspoon granulated garlic

Mix all ingredients in a small disposable aluminum pan (drip pan for a Weber gas grill is ideal, or you could make one out of heavy-duty foil). Place in smoker anywhere there's room and where other stuff won't drip on them. Smoke along with the main event for two or three hours. Remove from smoker and immediately remove from pan into a bowl and stir to break up clumps.

I did a batch of these yesterday while I was smoking salmon, so mine are alder-smoked peanuts, but I expect hickory is probably more traditional (and anything would probably be good). The syrup caramelizes and gets a bit crusty, so you might try oiling the pan first to make removal easier. I actually made mine with 1 1/2 teaspoons of red pepper flakes, but that was maybe a bit much. Enjoy!
