Cornmeal Buttermilk Pancakes

Well Folks, it looks like camping season is here.
I just know you're gonna bring the WSM.
Nothing better than sitting by the campfire eating baby backs, corn on the cob and potatoe salad.
Went camping last weekend and made these pancakes for breakfast. They are Outstanding.
I got the recipe from the Coleman Website.

Cornmeal Buttermilk Pancakes (Serves 6)
? 1 1/4 cups unbleached, all-purpose flour
? 2 tablespoons sugar
? 1/2 teaspoon baking soda
? 1/4 teaspoon salt
? 1 cup cornmeal
? 2 eggs
? 1 1/2 cups buttermilk
? 2 tablespoons safflower oil


At Home:



1. Sift flour, sugar, baking soda and salt into a bowl; stir in cornmeal. In another bowl, whisk together eggs, buttermilk and oil.

2. Pour buttermilk mixture into dry ingredients and whisk them together until just blended. Do not overmix.



At the Campsite:


3. Heat a large griddle or skillet over medium heat until a few drops of cold water dance when sprinkled on surface.

4. Drop 2 tablespoons of batter onto hot griddle or skillet and use back of spoon to spread batter into a round shape. Fill skillet with pancakes; cook them until tops are covered with bubbles and undersides are golden, 1 to 2 minutes. Flip pancakes and cook on second side until lightly browned, about 1 minute more.

5. Serve immediately
 
Jim, am I correct in understanding that you make the batter up in advance?

Yes, I did make the batter at home before leaving.
Didn't want to be measuring things at the campsite.
Stored it in the icechest in a tupperware container.
The batter was in the ice chest for about 18 hours before use and the pancakes still puffed up real nice on the griddle.
