Cinnamon and Allspice

When do you like to use these in a rub? or Sauce?

I did a batch of No. 5 sauce with some dried cherries and the cinnamon was a very appropriate addition.

Cinnamon works great with fruit anything IMO. I like to add a tiny amount of cinnamon in just for the head scratch thing. There's something in there I know what it is but I can't put my finger on it though, scratch head again and laugh at em.

Put about a 1/8 - 1/4 tsp in your next batch of chili (pending how much you made) just remember a little goes a long way, and watch em go nucking futs.

Warm spices. I tend to use cinnamon more in my rubs and allspice in sauces. Ground clove is another warm spice I use in sauces, start with just a little and taste, gets strong quick.
