Pre Turn In Seasoning Touches

Harry Soo suggests a light mist of water on ribs once boxed pre turn in for appearance. What do you think of substituting apple juice as long as it complements the overall flavour?

Also, and this may be considered blasphemy, but I like a tiny sprinkle of Kosher or Fleur de Sel. Just enough for the slightest taste, not like salting your french fries.

Any opinions or alternate suggestions? Assume it is a no garnish competition.

+1 to this ^.

A light spritz of AJ and some ground up rub will add a little extra punch of flavor, as long as you grind your rub very fine so it will blend in with your meat/sauce.
