Monday Tri-Tip Roast

I was able to find some Tri-Tip roasts at Costco. This is my first attempt. Coated with smoked olive oil and dusted with Mad Hunky General Purpose rub. Smoked with mesquite between 250-275.

Stuffed Baby Bella mushrooms. Used cream cheese, smoked colby jack and smoked pepper jack and a dusting of my BBQ rub.

Coated the asparagus with olive oil and salt/pepper.

Tri-Tip pulled at 142 and seared lightly on both sides. Going to rest it while waiting for the mushrooms and asparagus to get done.

Mushrooms ready to come off smoker. Smoked with pecan and apple at 225 about 1 hour.

All I can say is that I am very pleased at the way this roast came out as it was very juicy and tender.

Absolutely beautiful. With all the stuffed mushrooms I've seen on the last few posts, I'll be doing some on my next day off, Thursday.

Tell me more about your probe holder. Looks like a wedge with a cord clamp or something.
