Mexican Lasagna


 
Wanted a dinner that did not include seafood, steak or chicken...lol. Searched TVWB and didn't find anything so I emailed Larry Wolfe and he sent this instantly!

Larry Wolfe's Recipe

Seemed perfect for what I was asking. I changed a few things like using only 2 flour tortillas ( not chips ), many pickled japs ( see pics below ) and a 7oz can of Herdez Salsa Casera ( also pictured ) as well as several shakes of red cayenne and will top with sour cream once on the plate.

45 minutes later and foil removed! Back into the oven for about 15 minutes.

Cheese lightly browned.....done....plating to go!

Plated with sour cream and a sprinkle of Hungarian Hot Paprika - she wanted a bold flavored spicy dinner and she got it!!

Must be good....she came back for more but needed more sour cream - I think the bold flavors are coming through!

Thanks Jim! She has been wanting a spicy dish for a few days now and my chicken from last night failed so I kicked it up! And it worked...she is walking around drinking milk and eating crackers!

Wayne that looks excellent!! I Love your creativity with the peppers!!

How did it come out with the flour tortillas vs. the corn tortillas?? We always use the corn.

It turned out great! I can't compare the taste of using flour instead corn tortillas because this was the first time making it but I will confess that using flour instead of corn was my mistake. I just bought the wrong ones!

Will do this again next week with corn tortillas and thinking of adding drained black beans to the sauce as well.
 
I made this today after seeing the pictures. I added a bit of cumin, masa harina, and also added diced raw onions to the top before the last uncovered baking.

Very good meal!

I saw an episode of Dinners, Drive-Ins and Dives where Guy went to a Mexican Rest and they made a killer Mexican Lasagna. They put Green Olives in their Lasagna, just throwing that out there for the masses.
