Smoked Turkey and Wild Rice Soup

Turkey and Rice Soup

INGREDIENTS

3 tbls butter
1 tbls of EVOO
1 medium to large onion, chopped
3 stalks of celery, chopped
3 carrots, chopped
1 10oz can of Mushrooms
2 cups of diced/cubed turkey
3 (14 1/2oz) cans low sodium chicken broth
2 cans Cream of Chicken Soup
2 Bay Leaves
1 tbls dried Thyme
1 6oz box of Uncle Ben’s Long Grain Wild Rice (Roasted Garlic)
1 6oz Package of Uncle Ben’s Original Rice (Roasted Chicken)
1 10oz package frozen green peas

DIRECTIONS

In a large kettle or Dutch oven, sauté onion, celery, and carrots in butter and olive oil until onion is transparent. Add the mushrooms.
Add chicken broth and whisk in the cream of chicken soup. Add remaining spices.
When smooth add the cubed turkey and rice with flavor packet from Long Grain rice.
Add frozen green peas.
Bring to a boil and boil for one minute. Reduce heat and simmer for 20 minutes or until heated through and rice is tender.
