Black Bottom Cake (or Cupcakes)

1 cup cream cheese, softened
1 egg
1/3 cup sugar
1/8 tsp salt
1 cup semisweet chocolate chips

1 1/2 cups flour
1 cup sugar
1/4 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup oil
1 tablespoon vinegar
1 teaspoon vanilla
sugar and blanched almonds, optional


Combine cream cheese, egg, 1/3 C sugar and 1/8 tsp salt. Beat well. Stir in chocolate chips. Set aside.

Sift together flour, sugar, cocoa, soda and salt. Add water, oil, vinegar and vanilla. Beat well. Pour into greased and floured 9 x 13 pan and top with spoonfuls of cream cheese mixture or fill lined muffin cups 1/3 full and top with heaping teaspoon of cream cheese muxture. Sprinkle with sugar and blanched almonds (optional)

Bake at 350 degrees for 30 minutes

BTW...makes GRATE cupcakes...
