Purchasing a knife for Q'n gets pretty personal, however; if I were you I would look into the "Old Hickory". I have one with a 10" blade and I would have no other. These are High Carbon Steel with a Hickory handle, very sharp and I sometimes use mine as a weapon to fight off dragons if I've been forced into eating a poorly rated "Q" to "Art carving" a beautiful brisket. These have been around since the early 1900's, sell on-line delivered for less than $20.00 and are real quality for the price. Check Knife Center of the Internet.
