Question...I am not sure if I read this here or another forum...is there a good book you can buy that explains how to use different spices..for example with chicken you can use...salt, pepper, rosemary..etc..my fiancee asked me what to put on chicken the other day ...other than recipes..I am totally lost..
 
"Culinary Artistry" by Dornenburg and Page is recommended by Mike Mills, the author of "Peace, Love, and Barbeque". He claims it is an excellent resource for learning about spices and what they complement. Hope that helps.

You have touched on a little pet peeve of mine.
Spices add FLAVOR to a dish. Most spice descriptions try to steer you into using a certain spice with a certain dish and TOTALLY NEGLECT how the spice TASTES and in what forms (dried, fresh, ground etc) or suggested quantities.

One internet site that attempts to describe spice flavors is 'Mr Happys'
