Please, can anyone copy here Kutas' recipe for fresh breakfast sausage? Scheduled to grind and mix 20 lbs of pigmeat in the morning and cannot find my reference book.
Ingredients for 25 lbs.
7 ozs. salt
2 ozs. ground white pepper
1/2 oz rubbed sage
1/4 oz ginger
1/4 oz nutmeg
1/4 oz thyme
1/4 oz ground hot red pepper (optional)
1 1/2 lbs. ice water
