Washington > Seattle: Pecos Pit BBQ

This place is located directly across the street from Starbucks HQ. The menu hasn't changed in the 10-15 years I've been dropping in; pulled beef, pulled pork, sliced beef and a couple other variations that I can't remember. Pecos Pit is open only Monday - Friday from about 11 - 3. There's almost always a line of hungry diners in all weather and seasons. Seating is available outside at wooden picnic tables - deal with it.

This is some of the best 'cue I've ever wrapped lips around. While I feel confident that I can match the fork tender shredded beef, the spicy hot sauce continues to elude me and to haunt my dreams. It is SO good! The portions are VERY ample, and the combination of smoked meat, delectable sauce and dining al fresco is almost certain to result in a full belly and a sticky mess. You've been warned.

If you love 'cue, this is one of the very few Pacific NW must stops. HIGHLY recommended.
