Smothered Sausage & Red Potatoes, from Prejean's in Lafayette LA

2 Tbs corn oil
3 cups diced andouille or other Cajun sausage
1/2 cup diced onion
16 small red potatoes cut into fourths
2 qts rich chicken stock
2 Tbs chopped garlic
2 Tbs kitchen bouquet
juice of 1/2 lemon
2 oz. white wine (optional)
1 tsp cayenne pepper
1/2 cup half & half
1/2 cup butter

In a sauce pan over medium heat brown sausage. Add onion and saut? for 3 minutes. Add diced potato, chicken stock, garlic, kitchen bouquet, lemon, white wine, and cayenne pepper. Bring to a boil until potatoes are tender. Drain water and add cream and butter. Mash mixture leaving chunks of potatoes. Serve as a side with steak and gravy.
