Made homemade boudin last weekend. It's a very simple fully cooked sausage made with pork & rice.
My variety is made with smoked pork butts instead of braised & because my wife hates liver no liver.
Cooked up some for supper, most serve with mustard but I like with pickapeppa sauce.

Did you stuff those casings with a shovel?

But i bet they tasted great. Is there a recipe you could link?

New Grizzley vertical stuffer , needs to be bolted down , think it'll be easier after I do it right!
At least you know it's homemade

Boudin is on my make list also. I have a friend who drives truck long haul and he takes our Wisconsin cheeses to Louisiana and trades for smoked Boudin. That stuff is so goooooood!
