Most Carolia sauces include vinegar, salt, sugar, black pepper and red pepper.
I usually add a dash of worchestershire. I have seen celery seed or celery salt.

What do you like to add to the basic sauce?

I just do cider vinegar plus whatever rub I used...! Sooooo easy. I sprinkle it on the pulled pork, and offer up a little pitcher of it to add right to yer sammy in addition to some kinda' tomato based bbq sauce. Gives it that nice little tang.....

I like to add some crushed red pepper (like the pizza joints have) and some good ol' Tabasco. Lately I've been adding just a bit of ketchup (just seems to meld the flavors together).

When I was in Raleigh, NC I used to go to a small BBQ place that made an easy vinegar sauce:

Equal parts distilled and apple cider vinegar (I use 1 cup)
1 Tbsp Crushed red pepper
1 Tbsp Cayenne pepper
1 Tbsp Kosher salt (I like mine salty)

I've also left out the dried peppers and plunked in some fresh, although they need time to put the spurs to the sauce.

But I will *definitely* try Susan Z's quick & easy above!
