Smoking a turkey?

This has probably been talked to death but here I go. Instead of using the standard method of charcoal lighting can I get good results if I use the minion method of dumping one chimney of lit coals then dump one chimney of unlit on top. I have a twelve pound turkey and I want to get the temp around 350 degrees.
 
That's usually what I do. Actually I start with a little less lit (guess I'm in no hurry and I like a more gradual climb to temp) and a dry foiled water pan.
