I'm curing two jowls for quanciale. Right now they are resting one on top of the other in the fridge. Any problem in having them touch while they cure? Thanks, Max
I dont think so. But if you are curing them in a bag "massage" them every now and then. If in a container a stir wont hurt. Im no expert @ this but i dont really think it matters.
