I saw this recipe on US of Bacon show and thought I would try and duplicate it. It was fantastic, even my wife who does not like dark meat from the chicken could not stop eating one.
All ingredients ready for assembly, boneless chicken thighs, thin cut bacon, cheese, onion and jalapeno peppers.
I used a large laddle to lay the bacon then the chicken thighs, cheese, onions and peppers.
The chicken all wrapped and ready for BBQ rub. I used Dizzy Pig Dizzy Dust
On the WSM 22.5 with KBB, I used three pieces of cherry wood and one piece of hickory at 250 for 2 hrs.
Finished and ready for sauce.
I sauced three and left three dry, both were delicious

Of course I could not just smoke the chicken so I did 3 slabs of baby back ribs.
Next up my first attempt at bacon!
