Added Third Grate

Morning Team,
Added a third grate to my 22.5. Cooked the first time on it this past weekend, and had a hard time getting temp past 180. Weather was heavy and no wind, I had all three vents wide open. Do we think that the addition of the third grate changed the thermodynamics of the cooker?

I have three grates on mine and there was no noticeable change in performance. If I load all three racks with cold meat it takes longer for the WSM to come up to smoking temps but it does get there. I'm wondering if you think there might have been an issue with damp briquettes or lump. Give some more details and someone here with more experience can help you out.

Third rack itself shouldn't affect temp, but the thermal mass of a third rack of cold meat could affect temperature. Are you using dome temp or probes? If your going by dome therm and the third rack is on top cold meat near the therm could affect temp.

make sure the meat on the new rack isnt blocking your airflow somehow.
