I'm not to sure about the pie tin being used as a defuser but the smokey Joe smoker seems to hold temperatures really good. I had it climb to 350 pretty quickly. So there is no
issues with getting it hot. I have been able to keep at 250 for almost 4 hours with no problem.

Nice Build! I've had my mini for a couple of years now and I'm still amazed how efficient it is and how well it cooks
 
Nice Build on the Mini, and great looking tri tip! The longest cook I have had to date was right at 16 hours, holding a temp of 265°. Of course I can get a bit more charcoal in my mini's because I cut the bottoms out of the pot. With that said I could easily get 8-10 hours with my first one that didn't have the bottom cut out.
