Fascinating. Great pics. Thanks for posting. A couple years back I was in Southern France near the Spanish border on business and several of the restaurants had whole gigantic Serrano hams on carts they rolled around. I can't imagine that happening on this side of the pond (OHSA, health regs, PETA etc.).
 
Great article. I lived in Northern Italy near San Daniele where they produce Prosciuto di San Daniele. The kids would go there to see them make ham on school field trips. It was an awesome place.
