Mailbox Cold Smoker mod for the Mini-WSM and other smokers

So I use this modification on three of my smokers. I use it on the Mini, the UDS and My GOSM. The smoke generator that I use is the 12" & 18" AMNTS tube smokers from A-Maze-N Smokers. These were made to smoke pellet, but you can also get chips to smoke in them too. My mail box has a hole in the front that is just a bit bigger than the tube. The rear exhaust is 3" dryer vent, that in turn gets reduced down to either a 1" or 3/4" threaded nipple. This screws into the air inlets on the the UDS, Mini, and a modified port I have on the GOSM.

The pvc reducer is just slip fit together. This allows you t oscrew the nipple into the valve and then slip the nipple into the reducer

I should note that on the Mini I only use this during cold smokes since the valve gets too hot during hot smokes. On the UDS and the GOSM I can connect as the inlets do not get hot while hot smoking. I am working on a metal reducer to use on the mini.
 
Nice mod. I've seen guys use this on SMF to smoke cheese. What are you using it for?

Cheese, Bacon, fish, steaks, spices, peppers, butter, etc. I can hook it up t o my UDS and GOSM while hot smoking, as the valves don't get hot where I screw in the pvc adapter.

This weekend I smoked salmon, rockfsh, and tuna bellies, and cheese in the GOSM. I cold smoked the fish (was only 40°f) for one hour. Then hit the heat. Ran the smoker at 130° for 1 hour, then upped the heat to 150° for another hour. Then upped the heat to 180° until the salmon and tuna hit 145. Pulled those two out, kept the rockfish in the smoker for another 1 1/2 as I wanted more of a jerky texture.
