Antelope jerky trial run using pizza screens.

So I got my hands on some pizza screens from a local pizza place. 10 screens in all. Cut some wood blocks 1in sq.
Set up the 18.5"wsm snake method 2x2 on the charcoal mesquite for smoke.

Lit 13 coals to start.
Just had a little bit of meat so all I needed was 2 screens on one level. I have enough for 5 screens on each level, and the cooking grate and thats 6 layers per level on the wsm. that's a lot of jerky!

Looking for a temp any where from 150-190° looking good!

I let it go over night till the snake was dead.

Turned out great! Can't wait to really fill it up with all the screens. Think I'll have to go hunting next year for antelope and make jerky out of the whole thing.

Speed goats are about the only thing I haven't tried, what does it compare to? Yours looks great!
As far as flavor I'd have to say about on the bottom of the big game menu. Fun to hunt and makes great jerky, but not as tasty as deer or elk.
 
Good looking jerky Six...I will have to keep my eyes out for those screens..I could use a few for smoking salmon too!
