Today was sausage makin day. Started with a trimmed and sliced pork butt.

The Breakfast Sausage was vacuum packed and stashed in the fridge, the Summer Sausage and Snack Stick will hang over night in the beer fridge and I'll smoke them tomorrow.

Wow what a project. Looks super Dwain!! You'll have to let me know how you like that high mountain stuff...I looked at some the other day but didn't get any! Stuffing with the KA is a true art form and tests your patience!! You did good!!
 
Here are the snack sticks and Summer Sausage smoke/drying.
