Tenderquick for a Brined Breast?

I am tired of getting ripped off at the deli for sliced pepper turkey. Gonna make my own in one of the smokers. However, reading around a bit, some folks warn that the low and slow could breed nasties and recommend Moron's Tenderquick as part of the brine. Anyone have any thoughts on this>
