Dungeness Egg Muffins

Note: I put this in the Poultry Section as its really about the Eggs as any type of pre-cooked protien can be added to these!

This is a super simple recipe to make. If you can scramble eggs you can make this! You can use any combination of pre-cooked proteins (bacon, ham, sausage, pulled pork, buffalo chicken. crawdads, shrimp etc) and any combination of veggies (sauteed onions, diced bell pepper, diced jalapeno, chives, spinach, asparagus, tomatoes, mushrooms, etc...)

For large gathering we make these the day before and then reheat. We make a variety. For this batch I had leftover Dungeness crab and thought why not.

This will make a 6 muffins.

Preheat the oven, or smoker, or bbq to 425 (yes you can do these on the weber. You can also make these in a Dutch Oven.

Prep the muffin tin. You MUST use parchment paper or pre-made parchment paper cups, cooking spray alone will not work. Form cups out of parchment paper, or use pre-made cups. Spray paper with cooking spray, or liberally rub with raw bacon.

7 large eggs
salt, pepper, any other seasonings you may like. Old bay would've been a nice addition to this batch.
couple dashed of your favorite hot sauce.
Approx 7 tblsp grated cheese
chopped chives

Beat together the above ingredients. Pour egg mixture into lined muffin tin. Fill ea. cup only 1/3 full. Add about a table spoon of your protein and diced veggies. Top with egg mixture. Float a little more meat on top and add more grated cheese.

Put in the oven for 25-30 minutes or until cooked through (use toothpick to test) Tops should be golden brown. Add a bit more cheese and top with more chives.

Thank you and you're welcome John.

I'll be making a batch Sunday, but with fresh breakfast sausage instead! As long as I get the breakfast sausage made Saturday!
