Pork Shoulder/Picnic Defrost

This is most likely a no brainer, but will ask anyway. I have two to defrost for Sunday, 16 lbs altogether, have had them in deep freeze for a few months wrapped in original vac pack and then wrapped in freezer paper, when defrosting in fridge should I remove the paper or leave it? Also how many heads will those about feed?
 
You will have 1/4-1/2 weight loss when cooked depending on the fat content of the meat. How much you'll have to serve also depends on wether or not it's bone in.

Not sure why cryovac'd meat was wrapped in paper in the first place so I would remove it.
 
I wrapped it that way, cause I'd done some research in long term freezing of meat and said that's best for preventing freezer burn.
 
When defrosting the paper does help contain any water/moisture that drips out, if you put them on a tray and unwrap then no problems.
