My first sausage attempt

After doing much reading and research on this site and others, I finally got around to making sausage. I used David Somerville's great PDF from this site for a spicy Italian recipe. It tasted very good, the texture was great. I had some difficulty about halfway through the grinding process, some of the connective tissue completely blocked the grinding plate. Had to pull the whole thing apart and clean it, then it worked great. I guess I should've butchered better. All in all a successful first attempt. I was too busy to take many photos but will next time. The finished product:

That problem sometimes occurs if
1) the blade/plate/locking ring isn't tight or
2)the blade needs sharpening.
