Morton's TQ Beef Salami

I used the recipe found on the Morton's Salt site for some Beef Salami. I'll say not bad for a first timer but it needed something. (Probably the salt I omitted because I heard all the horror stories about TQ being too salty.





I used the 14.5" and pecan wood for smoke

Yep, use to make that a lot, many times with deer meat.
Next time try adding the salt, and red pepper flakes to taste.
 
Dwain, you're making me want to make a batch, it's been many years!
Wonder how subbing the salt with one's favorite rub would work?
