trying too get pics up, but got a natrual 12.5lb bird. did jack and maple syrup bring but did something different.. combined 1/2 gal water kosher salt, pickling spice 4 bay leaves peppercorns, and 2 cups maple syrup heated it up and then let it cool and into the frig for 2 days.. then put bird in cooler, another gallon of water plus apples oranges and brine mixture for 30 hopurs then 10 hours air dry.. loaded up WSm 18 with stubbs and then peach and apple.. top temp was 275 too 300 and rolled for 3.5 hrs.. temp aws allover the place everytime i put maveric probe in 165 breast and then 180 in some spots, then the popup went off so pulled... little dry but damm awesome flavor, still had some pink juices in thigh area, kinda weird, but still alive..great day working on pics.. thanx glenn in SC
