Cooking on the 18" at 350* (if I can maintain that temp).

350 might be pushing it unless you are cracking the door...I'd say 2.5 at 325 should
Be about right unless you got some crazy outside temp and wind! It's done when it's done...except for minute rice nothing is on time!!
 
I am planning on smoking a 8.5lb Turkey breast this New Years day on my WSM 14.5. So about how long and at what temp should this be done at. Thanks in advance to all the Turkey masters out there!
