First cook on my new WSM 22.5"
2 beer can chickens
I used apple chips and had water in pan with a minion start .
It took 3 hours at around 230
-Homemade rub

3 racks of spare ribs
I used apple chips again also filled the pan and started minion styles
Did the 3-2-1 method with a homemade dry rub and 3 different BBQ sauces my gf have been competing for the better sauce!
Averaging 260 for the 5.5 hours they were on
(Also added a drip pan on 2nd shelf for easy cleanup)

3 hours in and then foiled

Homemade sauces on and there tender as can be.

Very good ribs! may do 2-2-1 next time tho.

Cook # 3 and its third week in my life.
I cooked a pork shoulder 6 pounder (biggest I could find at night) with a homemade rub also apple chips, water full and minion start
It took 7 hrs and an average of 270 (which was way hotter then I wanted to do it at) also first cook with the maverick which is great but a little tip learn how to use it and keep the instructions before your cook at 4 am and just coming home from a party :)

Just on at 4 ish

Tasted amazing very flavourful!
Tried making different sauces for sandwiches , I will perfect it one day!

4th cook this weekend maybe pork belly? This is an addictive sport!
 
Great looking cooks. If your making sauces try the #5 sauce recipe in the sauce subsection of the recipe section. It's a great starting point for sauce.
 
Thanks everyone for the smoking support!! As I've said I was going to do pork belly this weekend I didn't know it took 7 ish days to cure so I may wait until next weekend ... I'm thinking of doing a brisket and whipping up some new rubs and bbq sauces. Who has made the best brisket on tvwbb? And thanks Bob.sample I tried the #5 sauce right after your post, added some liquid smoke and other spices pretty good and faster then my other complex sauces!
