Well, I can see what all the fuss is about. And this meal gives you plenty of time to fuss about. I started with a 2 1/2# chuck roast: there's just the two of us. And as soon as I got in my truck, I'm thinkin', I shoulda gotten a bigger one... I used Larry Wolf's recipe; just pared back a little. Well, and I started the cook on the rotisserie.

I also wrapped some asparagus and broccoli w/ bacon, S & P, oil and balsamic vinegar.



And, the beginning of a roasted cauliflower gratin

Awesome looking start on the PSB Brian! I never would of thought
to start the roast on the roti. May have to give that a try on my next one.
 
Don't be afraid of going to big Brian. It's just the wife and myself and after the first meal the rest get's divided up into meals and frozen. We still have some from the last one. Looks great! I'm sure you're hooked!
