Picked up some hanger steaks at Restaurant Depot. Thought I'd try them out for the first time.
There were 4 steaks in the cryovac.

I trimmed 2 down into 4 pieces. I marinated 2 pieces in Stubbs Beef Marinade and salted and peppered to other 2.

About 4 minutes per side direct over RO lump, and then indirect until medium rare.

I will definitely be making these again!

All I can say is Wow! Now, a few slices of that meat, and some fresh bread to soak up the liquids- must be an nice moment in life.

Nice work! I love hangers and they are well worth the little time and effort it takes to trim them up. I have a have a series of photos for others that are interested in hangers, its been some time since I put it up on the forum, so it might be good to revive it for those interested:

how to trim hangers

I take mine a step farther then you by removing the tendon that runs between the two muscle.
