Hash Brown Casserole

This is a good, easy side dish to make. If you're a fan of potatoes and cheese, you will be a fan of this dish.

Hash brown casserole

INGREDIENTS:
<LI> 1 bag frozen shredded hash browns (Ore Ida or similar)
<LI> 1 can cream of chicken soup
<LI> 1 cup sour cream
<LI> 2 cups shredded cheddar cheese (divided into one-cup portions

DIRECTIONS:
<LI> Preheat oven to 325f.
<LI> Butter a 9" x 13" baking dish
<LI> Mix together the hash browns, soup, sour cream, and half of the cheese, and form it into the baking dish.
<LI> Bake uncovered for 1.5 hours.
<LI> Top with remaining cheese, and put it back into the oven for 10 minutes (until the cheese is melted).

That's it. It's terribly unhealthy, but it is delicious.
 
We always have this dish for Easter dinner and it's simply the bomb! Gut bomb, that is, but oh so GOOOOD! We call it Heart Attack Casserole. Despite that, there is never a single crumb left to fight over!

They are nicknamed "Funeral Potatoes" around here.
We have them at almost every family function.

Similar recipe, but we put a corn-flake topping on them.
2 cups well crushed corn-flake cereal, mixed with 1/4 cup melted butter.
Sprinkle on top before cooking.
 
Yep, one of our favorites. Pairs great with holiday ham, or a big slab of ribs any time.

Wifes recipe uses chedder cheese soup.
 
I was looking for something different to do for our Easter ham and I found it. I'm using southern style hash brown, with onion, peppers and some bacon added. Doing a panko breadcrumb topping.

My wife made these yesterday, but didn't cook them yet.
In the fridge until near dinner time this evening.
Sad part is, there are never any leftovers. :(
 
Thanks for adding that Bob, I thought they might get soggy from prepping to early, so I'm getting them ready now (2 casseroles)
