Chris Lily's Championship Butt Injection

Hi All,

I'm doing a butt tomorrow (9lbs) and wanted to use an injection. I found the above on this site but find it very salty. Note that I've only ever really used apple juice with a few spices for an injection so I'm not quite sure if it's supposed to be salty and will mellow in the meat.

3/4 cup apple juice
1/2 cup water
1/2 cup white sugar
1/4 cup table salt
2 Tablespoons Worcestershire Sauce

I used Kosher instead of table and also added a pinch of rub (which is also salted) and a little more Apple Juice to cut the salt. Can anyone comment on whether this should be salty or if something is not right. I would hate to ruin the butt before I even started.

Yes, it is supposed to be salty. For a 9-lb butt you'd use half the mixture.

I believe if you are using salt by volume (not by weight) kosher salt will work out to be less than table salt.

I've used the inject, as is, with decent results. Butts are fairly massive and require a bit of salt to get them properly seasoned.
