my thermapen is also off by 5-10 degrees done with the ice water test and boiling water test. Can i calibrate my Thermapen? Or do we have to call in for service?

Solved my own problem, looks like weber makes 1 for the Genesis and 1 for the Spirit. I'm trying to use a target gift card, but looks like target doesn't sell the Spirit Rotisserie. Which is weird cuz they only sell the spirit grill and not the genesis grill. =\

yep, i know about searing and carmelization giving flavor and being over 250F causes this. but whats that have to do with the grill when we're talking about temps over 550F? am i missing smthing

Whats that? Given that i dont know what that is, to sear a pretty think steak like a flank or skirt steak, i'd normally preheat and heat up those cast iron grates as hot as possible then drop the steaks on to get a nice medium rare @ 1 min each side

Got a new tank of propane and turned on all 3 burners to max, after 20 minutes I maxed out at 550 F. Can this grill even get to 600?

good to know. so where does everyone do their propane tank exchanges? i only have lowes & home depot around me. I have a personal hate for lowes due to them dropping the ball on something way too important. That leaves me really with home depot. Should i just use them?
