I got tired of paying a lot for a little bit of wood. so ... .

Hi, I've been using a propane smoker lately. I'm still learning it, but all in all I like it a lot. But it sure does go through wood fast. Smoking a chicken with propane takes 3-4 times more wood than my Weber Smokey Mountain did and paying $6-$10 for those little bags of wood chunks at the...

Masterbuilt Pro Dual Fuel temp. prob. solved ... but creates a new problem.

I figured out how to get a low temp. on the*this Masterbuilt Pro Dual Fuel. Instead of using the lowest setting, I ran the knob past the high setting almost all the way off and got a 210 deg. reading and it was steady for over an hour. But here's the new problem. The wood chunks won't smoke at...

Looking at propane smokers ... .

I know, I know, I'm going to Hades to be slow smoked for eternity but l've been looking at propane smokers online today and have narrowed it down to two which are very similar. The only differences I can see is the one from Home Depot says it is "dual fuel," good for propane and charcoal. It's...

Fuel baskets, charcoal rails or just a couple of bricks?

I want to expand the use of indirect cooking in my Jumbo Joe. Did a chicken last week by shoving coals to both sides of the Joe and had to finish the chicken off in the oven to bring it up the last six degrees. Cost aside, I'd like to hear your opinions on the charcoal baskets, charcoal rails...

    Jumbo Joe grate size?

What size cooking grate does the 2015 Jumbo Joe take? Please answer from first hand experienece. I ask for first hand experience because, as usual, I'm finding ontradictory info out there. Some people say an 18.5 grate for an 18.5 One Touch will fit a JJ just fine. Others said only Weber...

    Jumbo Joe at Walmart

I decided to break down and pay full price on a Jumbo Joe since I couldn't find one on sale. Went to Walmart and when it was scanned at the counter it was $40 even. The cashier said it was either an unadvertised Labor Day sale price or an unadvertised clearance sale. Either way, I was happy...

Why did Weber discontinue the 18.5 OTG?

Hey, Why did Weber discontinue the 18.5 OTG? Was it not selling? I want an OTG but the 22" version is just to big for my uses. Is it difficult to convert the 18.5 OTS to a 18.5 OTG?

    Brinkmann water pan question

Hi, I bought a Brinkmann water pan to replace the Weber water pan on my 18.5 WSM. The fit is much better. I can add fuel, wood and stir the coals much easier now. This question is for people who are already using the Brinkmann water pan. Has yours developed (for lack of a better description)...

Hello, I have about 2.5 lbs of bottom round cut into 1/4" strips that will be done marinating in a couple of hours. I have never used my 18.5" WSM for making jerky and have a few questions. First, I'm going to use Stubb's briquettes. How much should I use and how should I set up the...

Smoked chicken; which wood do you use and why?

Has anyone tried this to get crispy chicken skin?

Will this crisp up chicken skin using a WSM? Towards the end of a whole chicken smoke, dump a new chimney of glowing ready coals in the bowl. When the chicken reaches around 160, remove the middle section pf the WSM, place the grate directly over the charcoal bowl and put the dome over the...

My thermometers always register the same temps. Unusual?

Hi, I'm using too many thermometers on my 18.5 WSM. They used to be security bankets for me but it occurred to me today that I don't need them. Besides an internal probe in the meat, I have been using 3 thermometers for way too long. These days I look at their readings as just a curiosity more...
