What kind of wood is good for a brined turkey?

I'm cooking a butterball frozen bird (thawed) without brining - just salt, pepper and butter in a pan with chicken broth and veggies per one of the Jamie Purviance methods. I'm cooking it right now with one small apple wood chunk on regular Kingsford and the smell is fantastic! I've been using...

    Pork Neck or Boston Butt

I just bought a copy of Ted Reader's book "Beerlicious" and I saw a recipe for pork neck (or schweinen necken) that I want to try. I want to do a German meal for my father-in-law for father’s day. He was stationed in Germany after the war and he loves German food. He's also got great stories...

    Alton Brown BBQ Sauce Recipe

What is this No. 5 sauce you speak so highly of? Where might i find the recipe? I've been using a simple mix of ketchup molasses vinegar and some spices heated up which I make a little differently every time because I never write down what I do.

Which is more cost effective- 24 Weber starter cubes or a weed burner w 20lb tank

Ahhh. The side burner. I'll have to try that one out. I bought a package of the cubes but i only use them to start the fireplace. They kick butt for that.

Pan or No Pan below the Bird?

This sounds like a good plan. It should keep the drippings from turning into brown varnish on the pan.

Pan or No Pan below the Bird?

Thanks Josh - and good luck with the giblet gravy. I tried that one year and I really liked it - very rich. My 2 cents on that is that it took a lot longer than I thought to make - more than an hour so start early.

Pan or No Pan below the Bird?

I've seen a lot of recipes calling for a pan under the turkey - some call for chicken broth added to the pan - and I have also seen pointers about putting the bird directly on the grill. The "Cooking Topics" (from the bullet site) has some tips for collecting drippings by putting the bird...

    Bucket

You might be able to do a taste test with plain water. Fill the bucket up with some water, shake it around and let is sit for a bit and then taste the water. I can taste the difference in water from the tap or from the filtered fridge water dispenser. Any flavor you can detect in the water...

    When to carve turkey?

I transported 2 briskets to a party once. I put them in a cooler and wrapped a few towels around them (and tin foil!). By the time they were ready to take out of the cooler about 2 hours had passed and both were still too hot to hold. I would guess this would work with a turkey as well but...

    Brine turkey in airtight bag?

Jeff - I saw this thread after I posted mine. I sealed the top of the bag with the zip-lock but then I twisted it to take up the slack in the bag to keep the bird covered and also to help the whole thing sit right.

Brining with a Zip Lock Bag and Cooler

Jeff - I thought it would be difficult to find these bags but I was amazed that they were right there in my regular supermarket sitting on a shelf with the rest of the plastic bags. I bought 2 sizes. One of the sizes I bought was 10 gallons - way way too big. I think I used the 4 gallon size.
