Downhere in Louisiana we call that a cajun microwave... There is a place not too far from me that makes them, and they are called a cajun microwave... I have one and I love mine...
When I smoke my turkeys I prefer to put them in a whisky brine... Do it for 24hrs... And they come out great and moist... I also inject some brine into them as well.
I am a big Pecan wood user... I really love it when I make my Pork Sausage... Pecan to me is great on everything... I also have plenty access to it for free...
