Salmon Chimichurri with Garlic Smashed Potatoes
For the sauce: 1 bunch parsley chopped Garlic minced (as much as you like, I added 2 cloves) 2 tbls olive oil 1tbls onion powder Squeeze of lemon Salt and pepper Dried red pepper flakes (I used a dried szechwan pepper chopped from the garden) Combine above ingredients and mix well. Slather sauce over both sides of salmon filets. To cook the fish I used the method described below by Clay J (great method I recommend trying if you haven’t yet) WSM Grilled Salmon Garlic Smashed Potatoes: 1-1.5 #’s red skin potatoes unpeeled Whole clove(s) garlic (your discretion again) Milk Butter Horseradish Dijon Mustard Salt and Pepper Add potatoes and whole garlic to cold water, bring to a boil. When potatoes are done, drain potatoes and keep garlic. Add potatoes and garlic to bowl and mash adding remaining ingredients to taste. Sauced On the WSM Let's Eat This message has been edited.
