Hello everyone. In July I finally wore out my 25 year old Brinkman Smoker and decided to buy a new 18.5 WSM. I came across this website and it has been a great resource for me. I have cooked a couple briskets and pork shoulders that have been perfect everytime. Thanks for all the great tips and advice.
