Hello everyone

Just recently joined the forum but have been using my WSM since June of this year. Got tired of dry tough ribs cooked on my Weber Performer (wonderful for grilling stuff but not so good at low and slow)

Have cooked ribs and chicken several times, a pork shoulder, beef tenderloin, and a flank steak, all with wonderful results. Planning on smoking a salmon today.
