Hello all, new Weber smoker owner or at least soon to be. I ordered a 22.5 WSM after beating my head against the desk reading countless posts about which smoker to get. Still a little scared I over did it with the 22.5 but I know I bought a great unit and like someone else stated buy the weber and cry once. Too late for me though I bought a Brinkman off set and spent a lot of time learning how to control temps. Ate some good food but threw away some really bad stuff early on. I have a Weber Genesis Silver C and love it, my favorite piece is the rotisserie for Turkey. I'm gonna try the Apple Brine this weekend on my new 22.5 WSM.

Well 2 days of BBQ and must say I'm happy but not ecstatic. There is a little bit of a curve with this but I must say it is easier than my offset was when I first started.

I started out with the beginners BBQ chicken which was easy and very good. Really enjoy the video on halving a chicken, I will use that a lot (might try it on the turkey next time).

Next I did the Apple Brine Turkey which turned out really good but I was a little frustrated with the temps on my 22.5 WSM that is were I need the learning curve. I never reached 350 only 325 which was difficult at that. I read a lot of advice on the site and will be trying some of those. I just had to finish off the turkey on my weber gas grill at 400 for a little while but smoked it for 3 hours at about 250 to 325.

The one thing I was excited about is how easy it is to maintain 250 to 275. Next weekend is rib time, very excited to see how much better my Weber is and glad I experimented with the poultry first.
